Randall Richards and his wife Nicki Pace, are the faces currently behind the Painted Pony. For the full history of the restaurant however, you must step back a few years. The previous owner June Pace, purchased the Painted Pony in February 2001 because she believed St. George was ready for an upscale dining experience.
June had restaurant experience and was ready to take the leap. Randall was her first chef and they worked well together because they were both passionate for food and the restaurant.
Initially, they found large support from tourists but as word spread more and more locals decided to try them out. Though the process took time it was worth the wait as its popularity began to grow.
In 2004 Randall indicated he was ready to take full control of the restaurant. June, having undertaken a new venture with the Bella Donna boutique, decided it was in everyone's best interest if she focused her attentions on her new project.
Randall and June both worked to make sure customers didn't notice the change. Randall has added his own touches without changing what made the restaurant great.
Randall's dedication to quality and his high level of consciousness are apparent in all aspects of the restaurant. He is committed to using fresh organic vegetables and obtains as much as he can from local growers.
He believes that seasonal is the way to go because vegetables give the most robust flavor when the time is right. His menu reflects those beliefs. The escolar they serve is line caught and their veal is humanely raised. They even pick their own watercress and keep a small herb garden.
Randall has a passion for doing things, "the way they should be done," but he also describes a need to remain somewhat practical. He takes his passion and ideas to his staff and trains them to produce the same product the same way, every day.
